6 ozcanned salmon
boneless, low sodium and preferrably packed in oil, or 3/4 cup cooked and shredded salmon

⅓ cuponion
finely diced

⅓ cupbell pepper
finely diced, any color

⅓ cupcelery
finely sliced

2 teaspoonsextra virgin olive oil

¾ cuppanko
regular or gluten-free

¼ teaspoondried dill

⅛ teaspoononion powder

⅛ teaspoongarlic powder

⅛ teaspoonsmoked paprika

⅛ teaspoonpepper

⅛ teaspoonsalt

½ cupmayonnaise
low sodium, or more, as needed
Instructions
Step 1
In a medium pan, sauté onion, bell pepper, and celery in olive oil and dry seasonings. Sauté for 4-5 minutes, until tender.
Step 2
Remove vegetables from heat and add to a mixing bowl with remaining ingredients. Fold mixture together until well combined.
Step 3
Add additional mayonnaise as needed, until mixture is slightly sticky and "holds" in together when squeezed.
Step 4
Form mixture into 6-8 even sized patties.
Step 5
Heat a cast iron skillet or grill and cook patties for 4-5 minutes, flipping once, until crisp and golden.
