Instructions

Step 1
With 1 tbsp olive oil, scramble the eggs with a sprinkle of red onions and a quarter cup of purple cabbage. Add seasoning of your choice.
Step 2
With 1 tbsp olive oil, saute the remaining red onion, purple cabbage, broccoli and sweet red pepper.
Step 3
In a bowl, mix the quinoa, black beans, scrambled eggs and sauteed vegetables and toss together.
Step 4
Make a dressing with the rind of the lemon, a tablespoon of lemon juice, a tablespoon of olive oil and a teaspoon of honey or maple syrup. Mix into the bowl.
