Ingredients
8 servings

2 lbboneless pork butt
trimmed and cut into 1 1/2-inch pieces

2 tspkosher salt

1 tsppepper

1 x 28 ozcan crushed tomatoes

4 ozpancetta
cut into 1/4-inch pieces

1onion
chopped fine

2carrots
peeled and chopped fine

½ cupred wine

¼ cupextra-virgin olive oil

6sprigs fresh thyme

2 Tbsptomato paste

4cloves garlic
minced

2 tspfennel seeds

½ tspred pepper flakes

½ cupfresh parsley
chopped

2 lbpasta
cooked

parmesan cheese grated
Instructions
Step 1
Oven 325.
Step 2
Season pork with salt and pepper and place in Dutch oven.
Step 3
Add to Dutch oven, tomatoes, pancetta, onion, carrots, wine, oil, thyme sprigs, tomato paste, garlic, fennel seeds, and pepper flakes. Stir to combine. Cover and cook until Pork is tender, 2-3 hrs.
Step 4
Discard thyme sprigs. Using a potato masher, mash pork into broken, bite-size pieces. Stir in parsley. Toss with cooked pasta and serve with Parmesan.
