1 lbboneless skinless chicken thighs

½ cupcornstarch
cut into bite-sized pieces

1 Tbspsoy sauce

½ tspsalt

½ tspwhite pepper

2 cupsvegetable oil

1 Tbspdark soy sauce

1 Tbsprice vinegar

1 TbspShaoxing wine

2 Tbsphoisin sauce

2 Tbspsugar

1 Tbspcornstarch
cut into bite-sized pieces

2 Tbspwater

½ cupchicken broth
or water
For sauce

2 Tbspsoy sauce

1 Tbspdark soy sauce
for color and depth

1 Tbsprice vinegar

1 TbspShaoxing wine
or dry sherry

2 Tbsphoisin sauce

2 Tbspsugar

1 Tbspcornstarch
mixed with, slurry

1. Marinate the Chicken:

In a bowl, mix the chicken with soy sauce, egg white, salt, and white pepper. Let it sit for 10 minutes, then coat with cornstarch.

2. Fry the Chicken:

Heat 2 cups of vegetable oil in a deep pan or wok to 350°F (175°C).

Fry the chicken in batches until golden brown and crispy (about 3-4 minutes per batch). Remove and drain on paper towels.

3. Prepare the Sauce:

In a small bowl, mix soy sauces, rice vinegar, Shaoxing wine, hoisin sauce, sugar, chicken broth, and cornstarch slurry. Stir well.

Heat 2 tbsp vegetable oil in a wok over medium-high heat.

Add dried chilies, garlic, and ginger, stir-frying for 30 seconds until fragrant.

Pour in the sauce mixture and cook for 1-2 minutes until it thickens.

Toss in the fried chicken, coating it evenly with the sauce.

Drizzle sesame oil, stir well, and remove from heat.
