1. Marinate the Chicken:

In a bowl, mix the chicken with soy sauce, egg white, salt, and white pepper. Let it sit for 10 minutes, then coat with cornstarch.

Heat 2 cups of vegetable oil in a deep pan or wok to 350°F (175°C).

Fry the chicken in batches until golden brown and crispy (about 3-4 minutes per batch). Remove and drain on paper towels.

In a small bowl, mix soy sauces, rice vinegar, Shaoxing wine, hoisin sauce, sugar, chicken broth, and cornstarch slurry. Stir well.

Heat 2 tbsp vegetable oil in a wok over medium-high heat.
