Wonton Peanut Sauce

I played around with numerous versions of dumpling sauce for 麻酱 similar to my favorite spots in Shanghai. I’ve left this with the chili oil and any additional dumpling sauces to taste, but I think the peanut/sesame blend is the most interesting way to present this sauce. Creamy and flavorful!

Instructions

Step 1
Start by mixing the peanut butter and sesame paste in hot water to create a smooth thinned sauce.
Step 2
Add the soy sauce, vinegar, sugar and adjust to taste
Step 3
Add chili oil to taste
Step 4
When serving, having a little classic dumpling sauce on the side is my preference (1 part light soy sauce, 1 part chinkiang vinegar, chili crisp) as it tastes delicious mixed with the peanut. Garnish with cilantro
