Slow Cooker Butterbean Stew

Packed with butter beans and spicy chorizo this easy stew is topped with pine nuts, fresh basil and dollops of pesto. But this taste of Spain is such a perfect dish that you can enjoy in any season.

Ingredients
6 servings
250gchorizo
chopped
2 x 400gtins of butter beans
drained and rinsed, or use dry beans that have been soaked in water overnight
2 x 400gtins of chopped tomatoes
1red onion
peeled and finely sliced
1 teaspoonpiri-piri sauce
smoked paprika
sea salt
freshly ground black pepper
4 tablespoonsgreen pesto
100gParmesan cheese
grated
fresh basil leaves
chopped
pine nuts
olive oil
4slices of focaccia bread
Instructions
Step 1
simply add all of the ingredients into your slow cooker, then season and stir well. Then cook on low for 6 hours or high for 3 hours.
Step 2
Then serve your slow cooker butterbean stew topped with spoons of green pesto and scattered with grated Parmesan cheese. Top with a handful of fresh basil and pine nuts, and drizzle with olive oil. Server alongside some tasty focaccia bread to mop all those delicious juices.
