Instructions

Make the crepe batter

Step 1
Combine the milk, eggs and sugar in a jug. Separately stir the butter into the flour in a mixing bowl. Pour the milk mixture slowly into the bowl and stir with a fork to combine as best you can.
Step 2
Pour the mixture into a food processor (like a nutribullet) and blitz until the batter is smooth
Step 3
Leave to stand for at least 15 minutes (whilst taking other steps)

Make the salsa

Step 4
Loosely chop the spring onion and add to another glass bowl. Remove avocado from skin and chop roughly, adding to the bowl. Peel a fresh mango and cut into small squares and add that on top. Add a splash of lemon juice and stir to combine, without breaking up the avocado or mango

Cook the salmon

Step 5
Place the 4 salmon fillets on a baking tray, season, and pop in the oven at 180 degrees for 20 minutes

Make the crepes

Step 6
Add a splash of oil to a hot frying pan and wait until it smokes. Then pour a thin film of batter covering the pan base.
Step 7
Cook for a couple of minutes, until the edges harden slightly. Use a pallet knife to release it from the side of the pan and keep agitating the pan until the crepe moves freely

Now toss the pan - it’s all in the wrist - so that the crepe turns over - and cook the other side.
Step 9
After a couple of minutes, toss it again to check it is cooked. Assuming it is, remove it from the pan and put to one side… and cook the next one
Step 10
Once you have 4 crepes, prepare to serve

Assembly and serving

Step 11
Put some fresh rocket onto a plate (or dish). Circle some balsamic glaze onto the rocket
Step 12
Add a crepe on top of the rocket and spoon a line of the avocado salsa across the crepe (left of centre)
Step 13
Place the cooked salmon on the crepe - in the middle - to the side of the salsa. If you can roll it up, do so, but don’t worry if it won’t roll - the crepe may be too thick - it is equally lovely open
Step 14
Once the fourth dish has been prepared, spoon any remaining salsa on top of each dish
Step 15
Any leftover batter can be retained to make a yummy pancake dessert
