Instructions

Step 1
Preheat the oven to 400°F (200°C).
Step 2
Clean the sweet potato and cut it into thin slices.
Step 3
Arrange the sweet potato slices on a baking sheet, drizzle lightly with olive oil, and season with salt and pepper.
Step 4
Bake the sweet potato in the oven for 20-25 minutes or until tender.
Step 5
While the sweet potato is baking, heat a skillet over medium heat with a splash of olive oil.
Step 6
Add spinach and halved cherry tomatoes to the skillet, cook until spinach is wilted and tomatoes are soft, then set aside.
Step 7
In the same skillet, crack the egg and cook to your preference (sunny-side up or scrambled).
Step 8
Once sweet potatoes are done, place them on a plate, top with sautéed spinach and tomatoes, then add the cooked egg.
Step 9
Garnish with slices of avocado, and season with additional salt and pepper if needed.
Step 10
Serve immediately and enjoy your healthy meal.
