Cottage Cheese Oat Rolls

These easy and healthy bread rolls are made from just rolled oats, cottage cheese, and eggs. They take only a few minutes to prep and rest, and bake nice and thin and crispy, perfect for a sandwich or toast

Instructions
Step 1
In a medium bowl, beat your eggs with a fork until smooth. Add in your (blended) cottage cheese, baking powder, and salt. Mix with a silicone spatula until fully combined




Step 2

Add in the rolled oats, and fold together until well combined. The batter should look too wet; let chill in the fridge for at least 30 minutes, so the oats can soak up the excess moisture

Step 3

Preheat your oven to 400F, and line a cookie sheet with parchment paper. Scoop the batter onto the pan (about 100 g each). Lightly wet your hands, and shape into an even circle. Optionally, top with everything bagel seasoning
Step 4

Bake at 400F for about 20 minutes, or until browned and firm to the touch
Step 5

Transfer to a wire rack to cool before slicing in half. Store in an airtight bag in the fridge for up to 1 week, or indefinitely in the freezer
