✳️ Macros (makes 8 slices):
68 Cals, 7g Carbs, 2g Fat, 7g Protein
*ONLY 409 cals and 41g protein for 6 slices*
✳️ Ingredients for Wet Ingredients:
1 Medium Egg
170g or 3/4 Cups Plain Nonfat Greek Yogurt
60mL or 1/4 Cups Almond Milk
28g or 2tbsp Light Butter, Melted
15mL or 1tbsp Lemon Juice
✳️ Ingredients for Dry Ingredients:
50g or 1/4 Cups + 3tbsp All Purpose Flour
1 Scoop Vanilla Protein Powder (I used
- code nickkaz saves 20%)
48g or 1/4 Cups Granular Sugar Substitute (I used Swerve)
2g or 1/2tsp Baking Powder
1g or 1/2tsp Salt
✳️ Ingredients for Mix-ins:
75g or 1/2 Cups Blueberries
Extra Blueberries (*optional*)
✳️ Ingredients for Glaze:
48g or 1/4 Cups Confectioners Sugar Substitute (I used Swerve)
15mL or 1tbsp Water
✳️ Directions:
1. Preheat oven to 350 degrees.
2. Grab mixing bowl. Add ingredients for wet ingredients. Mix thoroughly.
3. Grab another mixing bowl. Add ingredients for dry ingredients.
4. Add dry ingredients to wet ingredients. Mix. Add ingredients for mix-ins. Mix again.
5. Add mixture to loaf tin with parchment paper or cooking spray. Bake at 350 degrees for 30-35 minutes (take out slightly underdone - it’ll cook out of the oven).
6. While baking, grab another mixing bowl. Add ingredients for glaze. Mix.
7. Add mixed glaze. Store in fridge for 15+ minutes so glaze solidifies. Slice into 8 slices. Store in fridge. Then enjoy!
