Instructions
Step 1
Prepare the Dough: In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Stir in flour and salt until a dough forms.

Knead the Dough: Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour until doubled in size.

Shape the Pretzel Bites: Preheat oven to 450°F (230°C). Once risen, divide dough into small pieces and roll each piece into a rope about 1 inch thick. Cut into 1-inch pieces.

Boil the Bites: In a large pot, bring 10 cups of water to a boil and stir in baking soda. Boil the pretzel bites in batches for about 30 seconds each, then remove and place on a baking sheet lined with parchment paper.

Egg Wash and Bake: Brush the pretzel bites with beaten egg and sprinkle with coarse salt. Bake for 12-15 minutes or until golden brown.
