Honey Chipotle Chicken and Halloumi

I love t o cook with chipotle paste. It is such an incredible flavour that pairs divinely with honey and halloumi. This recipe is also perfect for meal prep if you want to make it ahead o f time.

Ingredients
2 servings

low calorie cooking spray

200gchicken breast
diced

1 tspsmoked paprika

1 tspdried oregano

1 tspgarlic purée

60greduced fat halloumi

1courgette
diced

1red pepper
small, diced

1red onion
small, diced

1 tspchipotle paste

15ghoney

1 Tbsptomato salsa
250gmicrowave Mexican-style rice

40gperi peri mayonnaise
I use, Perinaise

3 sprigsfresh parsley
chopped

Instructions
Step 1
Set a saucepan over a medium heat and spray with low calorie cooking spray
Step 2
Season the chicken with the smoked paprika, oregano and some salt and pepper to taste. Rub in thoroughly.
Step 3
Add the garlic puree to the frying pan, cook for 1-2minutes, then add the chicken. Pan-fry for 7 minutes.
Step 4
While the chicken is cooking, heat a second frying pan over a medium heat and spray with low calorie cooking spray. Dice the halloumi into chunks and, once the pan is hot, fry for 1-2minites on each side until golden.
Step 5
When the chicken has started to brown, add the courgette, pepper and onion to the chicken pan. Fry for 5 minutes until the vegetables have slightly softened
Step 6
Add the chipotle paste, honey and salsa to the chicken and vegetable pan. Combine well and loosen with a little water it needed
Step 7
Cook the rice according to the packet instructions and add to the chicken and vegetable pan. Top with the halloumi, peri peri mayonnaise and parsley. Serve
