Instructions

Step 1: Add a little oil and ½ cup of chopped kimchi, ½ tablespoon of sugar. Stir-fry over medium heat. Once the moisture has evaporated and the kimchi is well cooked, transfer it to a plate.

Step 2: Melt a little butter in a pan and place one tortilla. Add 2 slices of cheese first, then a suitable amount of stir-fried kimchi. Sprinkle a generous amount of mozzarella cheese and finish with chopped scallions.

Step 3: When the bottom is golden, fold the tortilla in half and cook slowly over low heat until the cheese is completely melted.
Step 4
Step 4: Once the cheese has melted, the kimchi quesadilla is complete! Use a knife or a pizza cutter to cut the quesadilla into three pieces. Enjoy!
