Smoked Chicken caprese and avacado salad

Instructions
Step 1
Prepare the greens.
Slice cherry tomatoes in half.
Thinly slice onion.
Wait to cut avacado until right before serving. To keep them from turning brown.
Step 2
Make pesto
Add basil to a tall container that you can burr mix inside of without making a mess or use a traditional blender.
Add .25 cups of olive oil, fresh parm, 2 cloves of garlic, and the pine nuts.
Burr mix all of the ingredients until smooth adding more olive oil if needed add salt and pepper to taste.

Step 3
Smash chicken thin.
Lay out plastic wrap or large ziplock bag add oil add chicken and pound the chicken until it is the same thickness all the way through. Roughly 1/2 inch. This makes the chicken cook evenly and makes it very juicy and tender.
Step 4
Make the balsamic dressing
Add the balsamic vinegar, .25 cups olive oil, minced garlic clove, and honey. Stir to combine.
Step 5
Marinate the chicken with a couple table spoons of the dressing for 30 minutes. Season chicken with garlic powder, salt, pepper, onion powder.
Step 6
Preheat smoker to 300 degrees smoke the chicken and baste tje chicken with balsamic honey mix every 5 minutes until internal temperature reaches 165 farenheit. Pull chicken out to rest for 5 minutes.
Step 7
Cut avacado and scoop out.
Step 8
Assemble salad. Drizzel with pesto, balsamic dressing, and freshly grated parmesan cheese. Enjoy!
