For the strawberry syrup

400gfresh strawberries
hulled

3 tablespoonssugar

1lemon
Optional, Juice of, or a splash of Alchermes or Limoncello Use lemon juice for a fresh, kid-friendly version Liqueur adds a more traditional, boozy twist

Instructions
Make the strawberry syrup
Step 1
In a blender, combine the strawberries, sugar, water, and your choice of lemon juice or liqueur. Blend until smooth. Pour into a shallow bowl for dipping.






Make the mascarpone cream
Step 2
In a heatproof bowl, whisk the egg yolks and sugar over simmering water until pale and slightly thickened. Let cool, then gently mix in the mascarpone.




Step 3
In a clean bowl, beat the egg whites until stiff peaks form. Fold them gently into the mascarpone mixture to keep it light and airy.





Dip the ladyfingers
Step 4
Quickly dip each ladyfinger into the strawberry syrup—just a second or two per side. They should be moist, not soggy.

Layer it up
Step 5
In an 8x8-inch dish, arrange a layer of dipped ladyfingers. Spread on half the mascarpone cream, then add a few sliced strawberries. Repeat with another layer of ladyfingers and the rest of the cream.


Chill and serve
Step 6
Cover and refrigerate for at least 3 hours. Just before serving, top with more fresh strawberries and a dusting of powdered sugar if you like.
