It's April Fool's Day, so let's do something dumb. Have you ever just straight up roasted an onion? It's actually surprisingly good. It can work as a zero effort vegetable addition to your plate, or as a topping for a sandwich or taco. If you like soft and sweet caramelized onions, this variation gets you about 80% there for next to no work
