Instructions
Step 1
1. Toss together shrimp and 2 Tbsp. cilantro in a large bowl (see "Save a Bowl," above left).
Step 2
2. Heat oil in a large skillet over medium heat. Cook onion and bell pepper until tender, about 4 minutes.
Step 3
Add garlic; cook until fragrant, about 1 minute.
Step 4
3. Add wine, then use a wooden spoon or spatula to scrape up any browned bits from bottom of skillet.
Step 5
Bring to a boil. Reduce heat to low and simmer until wine is reduced by half, about 4 minutes. Stir in salsa; bring to a boil. Reduce heat and simmer 2 to 3 minutes to allow flavors to meld
Step 6
4. Add shrimp mixture. Cook over medium heat, stirring frequently, until shrimp are opaque, 2 to 3 minutes.
Step 7
5. Sprinkle shrimp mixture with remaining 2 Tbsp. cilantro. Garnish with black pepper. Serve with tortillas, Mexican crema, and/or lime wedges.
