Instructions

Step 1
Gently pound the pork slices to tenderize, ensuring they remain about 1.5 cm thick. Lightly season with salt and make small cuts along the edges to prevent curling during cooking. Place the meat in a bowl, cover with milk, and refrigerate for at least 12 hours, preferably overnight.​
Step 2
Heat lard or oil in a pan over medium heat. Remove the meat from the milk, let it drain, and pat dry. Fry the meat on both sides until golden brown and cooked through, approximately 10 minutes in total.​
Step 3
Peel and thinly slice the onion. In a separate pan, sauté the onion slices in lard or oil until they become golden and caramelized.​
Step 4
Slice the bread rolls in half. Optionally, toast them lightly in the pan for added texture. Spread mustard on the inside of the rolls if desired. Place the cooked pork slice inside the roll, top with the caramelized onions, and add pickles or hot peppers if preferred.
