Ingredients

3 cupscherry tomatoes
½ cupolive oil
6garlic cloves
chopped
3 tablespoonsitalian seasoning
1 lbshort cut pasta
orzo or macaroni
½ cuppitted kalamata olives
roughly chopped
½ cupbasil
chopped
2 tablespoonspepperoncini
sliced
2 cupsshredded mozzarella cheese
4 ouncessliced peperoni
2bell peppers
any color, thinly sliced
Instructions
Step 1
Preheat oven to 400 F
Step 2
In a 9x13 inch baking dish, combine the cherry tomatoes, olive oil, garlic, italian seasoning, salt, black pepper, red pepper flakes. Bake until the tomatoes begin to burst, about 10 minutes.
Step 3
Pull pan out of the oven (leave oven on) add the pasta, olives, basil, and pepperoncini. Pour in 2 cups of water and stir to combine. Top with the mozzarella, pepperoni, and bell peppers.
Step 4
Return to the oven to bake, until the sauce is bubbling and the cheese is melted, 35 minutes more.
Step 5
Top with lots of fresh basil and serve family style.
