Instructions

Step 1
Scramble the Eggs:

Heat 1/2 tablespoon butter in a large pan over medium-high heat.

Add eggs and scramble for 1–2 minutes.

Remove eggs and set aside.

Sauté Veggies:

Add 1 tablespoon butter to the pan.

Add carrots, onion, peas, and garlic. Season with salt and pepper.

Sauté for about 5 minutes until carrots and onions soften.

Add Rice & Sauces:

Increase heat to high.

Add remaining 1 1/2 tablespoons butter and stir until melted.

Add rice, green onions, soy sauce, and oyster sauce (if using). Stir to combine.

Fry the Rice:

Sauté for 3 more minutes, stirring occasionally.

Let the rice sit briefly between stirs for crispy bits.

Add Eggs & Finish:

Stir in scrambled eggs.

Remove from heat and mix in toasted sesame oil.

Taste & Serve:

Adjust with more soy sauce if needed.

Serve immediately or store in a sealed container for up to 3 days.
