Preheat the oven to 180°C

Add vegetables to a roasting tray

Drizzle with olive oil

Season with salt and pepper

Roast for 45 minutes
Step 6
Remove from oven.
Step 7
Skin peppers and tomatoes and squeeze garlic out of its skin. Add to a pan with the rest of the vegetables
Step 8
Add 500ml vegetable stock
Step 9
Blend
Step 10
Add harissa and cream
Step 11
Season to taste and and more stock if too thick
