Step 1
Preheat oven with baking sheet inside at 375 degrees.
Step 2
Cut two sheets of parchment paper to roughly 17x11.
Step 3
Bring a pot of salted water to boil with the red potatoes until just underdone, about 8 minutes. Let the potatoes cool and slice.
Step 4
Place your sliced potatoes down on the parchment paper in a row, then place the salmon on top. Season with salt and pepper and then add lemon slices, followed by butter and pomegranate seeds. Drizzle wine over the top and close the parchment paper. Be sure to create a tight seal otherwise the steam will escape. Place the packet on the heated baking sheet. Bake for about 9-12 minutes.
Step 5
Serve by cutting open the pinch on top with a knife or scissors.
