Ingredients

For Suasages
For the mash

600gpotatoes
peeled & cubed

1 Tbspolive oil
or butter

2 TbspGreek yoghurt
or sour cream

1garlic clove
minced

Salt

pepper
to taste

1 tspdried oregano
optional
For the roasted veges
For the greens
For yogurt and lemon sauce
Instructions
Step 1
1️⃣ Roast the Veggies • Preheat the oven (or air fryer) to 200°C. • Toss the capsicum & zucchini with olive oil, oregano, salt & pepper. • Roast for 15-20 minutes, tossing halfway.
Step 2
2️⃣ Cook the Sausages • Pan-fry: Heat a pan over medium heat, add sausages, and cook for 12-15 mins, turning occasionally. • Air-fry: 180°C for 10-12 mins, shaking halfway.
Step 3
3️⃣ Make the Mash • Boil potatoes in salted water for 15 minutes, until fork-tender. • Drain and mash with butter/olive oil, yoghurt, garlic, oregano, salt & pepper.
Step 4
4️⃣ Steam the Beans • Microwave or steam for 3-4 minutes, then toss with garlic salt & olive oil/butter.
Step 5
5️⃣ Make the Sauce. • Mix yoghurt, lemon juice, garlic, salt & pepper.
Step 6
6️⃣ Assemble & Serve • Plate up the mash, sausages, roasted veggies & greens. • Drizzle with the yoghurt sauce.
