Step 1
- Preheat oven to 220/200°C fan-forced.
- Finely chop celery, onion and garlic.
- Grate carrot.

- In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook celery, onion and carrot, stirring, until softened, 7-8 minutes.

- While the filling is cooking, heat a saucepan over medium heat. Melt butter just until it started to bubble, add flour and stir continuously until a paste is formed. About 1 minute. It should start to turn dark yellow, orange. This is your roux.
-Add the milk and stir continuously until smooth and thick. Season to taste.

- Assemble the lasagne. Spoon a third of the filling on the bottom of a baking dish, add lasagne sheets to cover, add a third of the white sauce, then filling then lasagne etc until you have a layer of white sauce on top.

- Bake from 15-25 minutes until golden brown on top, depending on oven.
