Corned beef with mash and veg

To make this recipe, you will need a slow cooker. For the main part, it's a set and forget, and the result is a juicy and tender corned beef. I usually start this recipe before heading out to work in the morning. That way, it's cooked and ready for when I get home, just need to make some veg and the sauce. .

Instructions

Step 1
In a slow cooker, add the corned beef, peppercorns, cloves, bay leaves, brown vinegar, brown sugar, the onion (kettle and quartered), and then top up the slow cooker with water so that it just covers the beef.

Place the lid onto the slow cooker and turn it on to the "low" setting. If your slow cooker has a timer, set it for 8 hours and then either "warm mode" or off, if you home later than the finish time.
Step 3
After 8 hours, turn the slow cooker to "warm mode" if it is not already done from the step above.
Step 4
Peel and quarter the potatoes, then add them to a medium pot half filled with water. Cover the pot with a lid, place it on the stove, and bring it to the boil, remove the lid, and let boil for 8 minutes or until tender. Tip: Use an electric kettle to boil the water faster, then pour into the pot.

Peel and chop the carrots, and cut the broccoli into florets, then place both in a large microwave safe steamer bowl along with a tbsp of water, (you could also use a microwave safe bowl and cover with cling film if you dont have a steamer). Place in a microwave on high for 5 minutes.

Place a pot on the stove on medium heat, and melt the butter in it (careful not to burn it). Add the flour and whisk it together until combined and thickened. Keep whisking and slowly add the milk 1/2 a cup at a time until combined, then repeat until all the milk is added. Keep stirring using the whisk for 3 minutes until the sauce thickens to you desired consistently, then remove from heat.

Finely chop the chives and add to the sauce along with the horseradish. Stir to combine.

Drain the potatoes (leaving them in the pot), then mash them, adding the butter, milk, and salt. Mix well with a fork removing (mashing) any lumps as you do.

Remove the beef from the slow cooker (being gentle) and slice into 1cm thick slices.

To serve

Step 10
Place 2 slices of beef onto each plate and top with sauce. Add a scoop of mash potato and a mix of the veggies to the side of the beef. I also like to add some of the cooked onion to each plate. Enjoy
