Instructions

Step 1
1. Prepare the Sweet Potato: Roast, steam, or microwave the sweet potato until soft. Peel it and mash it well. You need around 200 g of mashed sweet potato (about 1 medium).

2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. Mix Wet Ingredients: In a separate bowl, whisk together the mashed sweet potato, egg, milk, melted butter, and vanilla extract.
Step 4
4. Combine: Add the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly thick but still pourable. Add a bit more milk if it’s too thick.
Step 5
5. Cook: Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil. Pour about 60 ml (¼ cup) of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.

6. Serve: Serve warm with your favourite toppings.
