These light and fluffy gluten free pancakes will have you wondering if they really are gluten free! The buttermilk adds to the lightness of the crumb. Slather with butter and add real maple syrup for a special breakfast treat.

Instructions

Step 1
In a large mixing bowl, add all of the dry ingredients and whisk together.
Step 2
In a separate bowl whip the eggs and add the buttermilk.
Step 3
In a microwave safe cup, melt the butter and add to the wet ingredients. Whisk until frothy.
Step 4
Add the wet ingredients to the dry ingredients in the large bowl. Whisk until everything is fully incorporated. The batter will get a little more fluffy as it sits for a few minutes.
Step 5
Heat a cast iron skillet to medium heat and add a small amount of oil. Dip a 1/4 cup at a time and bake pancake until golden brown on both sides.
Step 6
Slather with butter and real maple syrup for a special breakfast! Serve hot.
