Mediterranean Style corned beef hash, adapting a comfort food because you can enjoy what you love without sacrificing health… hopefully cause this recipe attempts to hide chickpeas 😅 in this method I split prep and dinnertime steps to make it quick and easy with a little forward planning (or just do it right before, it’s all really quick! Instructions

Prep (15–20 mins – can be done earlier in the day):

Step 1
Potatoes: If raw, dice or slice and roast or pan-fry in olive oil until golden and tender. Let cool and refrigerate.
Step 2
Chickpeas:Pat dry, then lightly fry in a small pan with olive oil, garlic, cumin, and paprika until slightly crispy. Cool and refrigerate.
Step 3
Veggies: Steam or thaw stir-fry vegetables and cauliflower rice if frozen. Store together in the fridge.

Dinner Time (10–15 mins):

Step 4
In a large skillet or frying pan, heat olive oil over medium heat. Add cauliflower rice and stir-fry mix. Cook for 3–4 minutes.
Step 5
Add potatoes and chickpeas. Stir everything together and sauté until hot and golden in places (5–6 mins).
Step 6
Season with salt and pepper. Squeeze lemon over or drizzle with a splash of vinegar if desired.
Step 7
In a separate pan, fry 3 eggs to your liking(sunny-side up or soft yolk is great).
Step 8
Plate the hash in bowls, top each with an egg, a dollop of yogurt, and chopped coriander.
