Chili-Garlic Chow Mein

Instructions

Sauce

Step 1
Mince 2 heads of garlic, ginger, and desired amount of birds eye chili. This can also be done in a food processor

Step 2
In a pot, sauté chili, garlic, and ginger with some oil until fragrant.
Step 3
Add the soy sauce, oyster sauce, shaoxing wine, sugar, rice vinegar, and a grated shiitake mushroom. Bring to a boil.

Step 4
Dissolve the cornstarch in water and add to the sauce until it has thickened. Remove from the heat and store in the fridge for up to a month.

Velveted Chicken

Step 5
Add sliced chicken breast to a bowl along with baking soda and water. Mix well and refrigerate for 20-30 minutes

Take the chicken out of the fridge and rinse the chicken with water and pat dry.

Chow Mein

Step 7
In a wok or pan over high heat, add some oil and toss in your chicken slices. Fry until fully cooked and set aside

In the same wok/pan, add julienned carrots, onions, and cabbage. Stir fry until slightly charred.

Add the chow mein noodles and chicken. Toss until the noodles are cooked and everything is mixed well.

Turn the heat down to low and add some of the chili garlic sauce, salt, and white pepper to taste. Garnish with sliced scallions.
