Instructions

Step 1
Place rack in center oven and preheat to 325°
Step 2
Line 2 sheet pans woth parchment paper
Step 3
Mix and spread oats, nuts, coconut flakes and sunflower seeds on each sheet pan. Toast 7 minutes. Stir and toast another 5 minutes, or until coconut flakes have lightly browned. Reduce oven heat to 300°.
Step 4
Heat honey and nut butter(s) in sauce pan over medium heat. Stir until combined. Remover from heat. Add vanilla and cinnamon.
Step 5
Once oat mixture has completed toasting, remove from oven and place into large mixing bowl. Add in dry extras if you wish, like chia or flax seeds and toss. Stir in honey butter mix. Let cool for at least 5 minutes before adding extras like chocolate chips and/or craisins.
Step 6
Coat sheet pans generously with avocado or olive oil. Spoon or scoop out mixture into baking sheet, filling it entirely. Place wax or parchment paper over top and mush down, creating a dense, even layer.
Step 7
Bake 16-17 minutes for a chewy bar.
