This loaf is hiding a rainbow of secret veggies inside! Bell peppers, carrots, mushrooms, even asparagus (shhh!) team up with yummy lentils and beef to create a super-powered meal that’s colorful, comforting, and totally delicious. It’s like a garden party in every bite—and your taste buds are invited
Consider adding spinach, or quinoa...even chicken livers could be added to the puree and your kid's will never know.
*** this recipe makes two meatloafs, it freezes well, so I make one to eat that night and save one for another meal

¼ tspgarlic powder

⅓ cupegg whites
½ cupCanned Stewed Tomato
1sweet onion

10white Mushroom

¾ cupRed Lentils
soaked
½ cupItalian Parsley

I used cooked from a previous meal, but I am sure raw would be fine too

¼ cupBarbecue Sauce
2 Tbspbrown sugar
Instructions
Step 1
Preheat Oven to 365 f
Step 2
In a separate small bowl, mix brown sugar,
ketchup, and barbecue sauce together. Set
aside
Step 3
In a large measuring cup or mixing bowl, add the
tomatoes, vegetables, Soup mix, seasoning, and egg/ egg
whites
Using an immersion blender, blend together until
smooth
Step 4
Mix the raw ground meat and uncooked dry stuffing mix with the vegetable/egg/ seasoning
mixture. Mix thoroughly, but be careful not to
over mix, or "mush" as it will affect the texture.
Step 5
Divide the meat mixture between 2 9x5 loaf
pans. Form the meat into loaves. Create a trough
along the long sides of the pans and down the
middle, roughly 1.5 inches
Step 6
Spread the prepared barbecue, ketchup, sugar
mixture evenly over the top of the loaves
Step 7
Bake in a 365 f oven for 45 minutes. Or an internal
temperature of 160f is reached
Step 8
Allow to stand for 10 minutes before serving.
