Instructions

Step 1
Heat oven to 350°F.
Step 2
Spray 9" × 5" loaf pan with cooking spray.
Step 3
In a large bowl, add the julienned zucchini, sugar, brown sugar, apple sauce, oil, eggs and vanilla.

Whisk until well combined.
Step 5
Add the flour, baking powder, baking soda, and salt.
Step 6
Stir just until no dry flour remains, trying not to over mix.
Step 7
Pork the batter into the loaf pan.
Step 8
Bake for 40 to 50 minutes.

Cool in the pan for 10 minutes.

Remove from pan and transfer to a wire cooling rack to cool completely before slicing.

Store covered in the refrigerator
