Instructions
Step 1
Bring water to a boil for the noodles.
Step 2
Slice spring onions thinly, keep some green parts for garnish.
Step 3
Chop cauliflower greens into bite-sized pieces. Mince garlic.
Step 4
Cook noodles according to package (usually 8–10 min). Drain, set aside.
Step 5
While noodles cook, heat olive oil in a large pan, gently fry garlic and white part of spring onions (2–3 min).
Step 6
Add cauliflower greens to the pan, stir-fry for 5 min until slightly tender.
Step 7
Add spinach and soy sauce, stir until wilted (2–3 min).
Step 8
Pour in cream and let simmer for 3–4 min until slightly thickened.
Step 9
Toss cooked noodles through the sauce. Taste and season with extra soy sauce or chili flakes if desired.
Step 10
Garnish with the green part of the spring onions and optional lemon zest.
