Ham and cheese quiche with zucchini and bell pepper. This makes 6 hearty slices, but you can go for 8 if you serve it with something, like fruit, yogurt, toast, etc.

Step 1
Preheat oven to 375°F (190°C).
Step 2
If using a frozen pie crust, let it thaw for a few minutes. Pre-bake for 7–8 minutes, then cool slightly.
Step 3
While prevailing the crust, sauté the bell pepper and zucchini in olive oil or butter for 3–4 minutes until just softened. Let cool slightly.
Step 4
In a mixing bowl, whisk together eggs, milk, salt, and pepper.
Step 5
In the crust, layer the cheese, ham, and sautéed veggies.
Step 6
Pour the egg mixture over the filling, leaving a little room at the top.
Step 7
Bake 35–40 minutes, or until the center is set and the top is golden. Rest for 5-10 minutes and serve!
