Chicken, Bacon, Leek and Potato Pie

Instructions

Step 1
Peel and dice the potatoes, then boil until tender.

2. Dice the chicken and bacon, and slice the leek stem. Finely chop the mushrooms.

3. Heat a pan over medium-high heat and cook the bacon until browned. Add the leek and stir to combine.

4. Push the mixture to one side and add the chicken to the pan. Season with salt, pepper, onion powder, and garlic powder.

5. Add the mushrooms, crème fraîche, thyme, and cornflour, stirring to combine.

6. Pour in the chicken stock and allow to simmer until reduced.

7. Divide the mixture into four containers.

8. Mash the boiled potatoes with butter and place on top of the chicken mixture.
Step 9
9. Top each portion with 20g of cheese.
Step 10
10. Bake in oven at 180°, for 15minutes or until cheese is melted.

11. Store in fridge.
