Instructions

Step 1
Remove the skin from the chicken and dust with salt, black pepper, smoked paprika, and cayenne pepper. Cook in oven for 15-20 minutes until cooked. Set aside & break up the meat.

Step 2
Add a little oil to a pan & any chicken juices and heat. Stir in the flour. Stir over a medium-low heat until it reaches a deep, rich brown colour, about the shade of melted milk chocolate.

Tip in the onion, pepper, smoked sausage, and green beans and cook, stirring, for a few minutes until softened.

Step 4
Gradually stir in the stock, little by little, until you have a smooth sauce, scraping the bottom of the pot as you do so. Add in cayenne pepper and smoked paprika

Add the chicken back into the pot and bring to a simmer. Turn down the heat, cover and simmer for an hour and a half.

Add the okra, stir, replace lid and simmer for a further 10-15 minutes until the sauce has thickened

Add tabasco to taste and serve
