Instructions

Step 1
Cook the sweet potatoes: Wash them and boil in enough water to fully cover them for 25-35 minutes, until tender. Drain and let sit until cool enough to handle.
Step 2
When potatoes are cool enough to handle, peel and cut them. (We cut them in half the long way, but I think you do thick cross-slices too.) Spray a shallow 1.5 qt baking dish with cooking spray. Arrange potatoes in pan.
Step 3
Mix together dry ingredients (sugar, brown sugar, zested orange peel, cornstarch). Add juice and butter. Stir and bring to a boil. Reduce heat. Cook at a simmer, stirring continually, until thick and even in texture/ color (a few minutes after turning down the heat.)
Step 4
Pour over sweet potatoes. Bake uncovered at 30 min at 350°F, basting occasionally.
