Instructions
Step 1
Cook rice, keep warm.
Step 2
Slice zucchini. Slick up with olive oil.
Saute zucchini in pan, stirring occasionally.
Slice onions. Add to pan, stirring occasionally.

Add whole can of tomatoes, stir occasionally
Step 4
Slice smoked sausage, add to pan.
Stir occasionally to heat through, or, if zucchini isn't tender, you can cover pan and reduce heat to low. Can add a little water if needed to make sure zucchini steams.
Step 5
When zucchini is tender, lay cheese on top and cover a few minutes until melted. Stir melted cheese in

Serve hot over rice
