Instructions
Step 1
In a large skillet, heat olive oil over medium high heat until shimmering.
Step 2
Season the scallops with salt and pepper. Add them to the skillet in a single layer. Cook for about 2-3 minutes with out moving them until the form a golden crust
Step 3
Flip the scallops and and cook for another 22-3 minutes until they are opaque and cooked through. remove the scallops and set aside.
Step 4
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant
Step 5
add the fresh spinach and sauté until wilted, about 2-3 minutes.
Step 6
Stir in the lemon juice and zest, and return the scallops to the skillet. Toss everything together to coat everything in the garlic lemon sauce
Step 7
Serve immediately, garnished with the red pepper flakes if desired
