200gchicken breast
large, cooked and chopped

0.5 headbroccoli
chopped small

1 cupscheese
grated, tasty, cheddar, or a mix

1 Tbspbutter
or oil

1 Tbspself-raising flour

¾ cupmilk
add more if needed

1 sheetspuff pastry
depending if you want a lid + base

1egg
for brushing, optional

1 tspmustard
Optional flavour boosters

1garlic clove

dried Italian herbs

Instructions
Step 1
1. Steam broccoli: Lightly cook broccoli until just tender. Set aside.
Step 2
2. Prepare chicken: If raw, dice and pan-fry until cooked through. If pre-cooked, chop into bite-size pieces.

3. Make cheese sauce: • In a small saucepan, melt butter, stir in flour until bubbly. • Slowly whisk in milk to avoid lumps. • Simmer until thickened, then stir in cheese and any flavour extras.

4. Combine filling: Mix chicken, broccoli, and sauce together. Cool slightly.

5. Assemble pie: • Line a baking dish or tray with puff pastry (base optional). • Fill with chicken mixture. • Top with pastry lid, crimp edges, and cut a vent. • Brush with egg or milk for colour.
Step 6
6. Bake: • Oven: 190°C (375°F) for 20–25 mins until golden. • Air fryer: 190°C for 15–20 mins, checking at 12 mins.
