Instructions
Step 1
Mix water and salt together to create a brine. (No measurements as it’s partly dependent on how many filets you’re planning to cook.) Make enough to submerge the filets. Brine should be salty to taste.
Step 2
Submerge filets in brine and soak for 15 minutes.
Step 3
While filets are soaking, prep a non-stick pan for cooking the fish by grinding salt and pepper into the cold pan. No pre-heating!
Step 4
Remove filet(s) from the brine and pat dry. Place them skin side down in the cold prepped pan. Salt and pepper the filets.
Step 5
Cook for 6-8 minutes over medium high heat. You will see the flesh beginning to cook.
Step 6
Flip the filets and cook another 6-8 minutes (still over medium high heat). Use a meat thermometer in the thickest part of the filet to test for fineness. Remove when the temp reads 125.
Step 7
Rest for 6-8 minutes and serve.
