Instructions

Step 1
In a large bowl, mash the ripe bananas with a fork or hand blender until mostly smooth.

Add 3 eggs, 1 tablespoon honey, 1 teaspoon baking powder, and ½ teaspoon salt to the bananas. Mix well.

Stir in 1 cup pancake mix and ½ cup almond flour until combined. Mix well.

Stir in pancake mix and almond flour until combined.
Step 5
Pour batter into your rice cooker pot.
Step 6
Set rice cooker to "Multicook" for 50 minutes. (Don’t use the regular rice setting!)
Step 7
When finished, check with a chopstick—if it comes out clean, the bread is ready.
Step 8
Flip the pot carefully to remove bread and let cool.
Step 9
Enjoy your soft, moist banana bread! Sprinkle powdered sugar or serve with fresh fruits for extra deliciousness.
