Instructions
Step 1
Sear the Beef in batches until browned then set aside
Step 2
Add the Rendang Paste, Garlic, Chilli and Ginger and fry gently for 2–3 minutes
Step 3
Add the Beef, Coconut Milk, Beef Stock, Makrut Lime Leaves, and Lemongrass. Bring to a gentle simmer then reduce heat. Cook uncovered for about 1½–2 hours, stirring occasionally
Step 4
Add the Mushrooms and Red Pepper and simmer for a further 30-40 minutes
Step 5
Add the Spinach, Tamarind Paste and Brown sugar and cook for a further 5 minutes
Step 6
Remove Makrut Lime Leaves and Lemongrass and serve on Coconut Rice
