Dumpling & Noodle Bowls with a Peanut Sauce ~ 4 lunches for £6
You guys loved the gyoza bowls I posted last year, so I thought I’d use some cupboard staples to mix up the flavours with this soy saucey, peanutty broth. Hope you love it!! Save & like to try xx
Ingredients
12 dumplings (your preferred flavour) (£3.23)
200g rice noodles (£1.15)
1 head of broccoli (£0.79)
1 lime (£0.28)
Total £5.45
Cupboard essentials per bowl
1 heaped tbsp peanut butter
1 tbsp soy sauce
1/2 stock cube
300ml boiling water
1. Slice the broccoli into small florets, removing most of the visible stalk. Chop the stalks into small chunks, then airfry at 200°C for 8 minutes with 1 tbsp olive oil, salt and pepper.
2. You can either add the dressing to each bowl at this stage or do it when you’re about to eat. Add a noodle nest to each container, a serving of broccoli & stalks, then 3 gyozas. Store in the freezer until you’re ready to eat.
3. When it’s time to eat, throw the contents of one container into a saucepan with 300ml boiling water and 1/2 stock cube. Cook over a low heat for 4-5 minutes, or until cooked.
4. Serve with a crack of black pepper, optional chilli flakes and a squeeze of lime juice. Delishhhhh
