Instructions
Step 1
1 Preheat oven to 200°C/390°F. Roast sweet potatoes with oil for 20 mins.
Step 2
2 Flip potatoes, add all other veg, drizzle oil and balsamic. Roast 30 mins.
Step 3
3 Heat rice, mix with pesto. Fill spaces in pan with rice.
Step 4
4 Top with halloumi slices. Brush with oil.
Step 5
5 Grill for 5 mins until halloumi is crispy. Serve with hummus.
