Step 1: Cut the chicken into bite-sized pieces. In a bowl, combine the arrowroot powder, sea salt, and white pepper. Toss the chicken pieces in the mixture until evenly coated.

Step 2: In a large skillet, heat the olive oil over medium-high heat. Add the coated chicken pieces and cook until golden brown on all sides and cooked through, about 6–8 minutes. Remove the chicken from the skillet and set aside.

Step 3: In the same skillet, reduce the heat to medium and add the butter or ghee. Once melted, add the minced garlic (if using) and sauté for 1–2 minutes until fragrant.

Step 4: In a small bowl, whisk together the honey, chicken broth or water, lemon juice, and coconut aminos. Pour the mixture into the skillet with the garlic. Bring to a simmer and cook for 3–4 minutes, stirring occasionally, until the sauce slightly thickens.

Step 5: Return the cooked chicken to the skillet, tossing to coat evenly with the sauce. Cook for an additional 2–3 minutes, allowing the flavors to meld.
