Instructions

Step 1
Cook rice at 1:3 rice to water only simmering for 20mins with the lid on. After 20mins, turn the heat off and allow to sit for a further 10 minutes with the lid on. When ready to serve fluff the rice with a fork.
Step 2
Meanwhile deseed the chilli's and blend them with the garlic, coriander, mint, cinnamon, pepper, sugar, Worcestershire, salt, ginger, juice of a whole lime and 100mL water
Step 3
Slice the chicken however you prefer. Heat the oil to high and stir fry the chicken for 5-6 mins until golden.
Step 4
Tip the green sauce and reduce the heat to medium. Pour the 100mL water into the blender to get all the sauce out and tip into the pan.
Step 5
Simmer for a further 5 mins until the chicken is cooked through.
Step 6
Serve on rice.
