Instructions
Step 1
Clean clams with water thoroughly and soak clams with hot water for a few minutes.Once clams open up, simply remove and set aside.
Step 2
Dice garlic and ginger, slice scallion, prepare and cut dried chili, mix with Szechuan peppercorn.
Step 3
Put cooking oil in a heated skillet; simply add in diced garlic, ginger, dried chili and Szechuan peppercorn to stir fry for a minute on medium heat until aroma comes out. Further add in clams, and then add oyster sauce and cooking wine to stir, simmer for a couple of minutes.
Step 4
Season with light soy sauce, black pepper, sugar, chicken powder, mix thoroughly and finally garnish with chopped scallion, remove from heat and serve warm.
