One-Pan Caprese Chicken Bake Recipe

Instructions

Step 1 Set oven rack in upper third of oven, then preheat to 425°F. Refrigerating any leftovers.

Step 2 In large oven-safe, nonstick skillet, heat oil over medium-high heat.
Step 3
Season chicken breasts evenly with 1 teaspoon salt and pepper. Add to skillet in even layer and sear 4 minutes.
Step 4
Meanwhile, in medium-size bowl, stir garlic, balsamic vinegar, brown sugar and remaining 1 teaspoon salt until well combined. Add cherry tomatoes and toss until evenly coated.
Step 5
Flip chicken breasts and add balsamic-glazed tomatoes to skillet around chicken.
Step 6
Transfer skillet to oven and bake 20–24 minutes, or until chicken reaches a safe internal temperature of 165°F.
Step 7
Remove skillet from oven and preheat broiler. Top each chicken breast with 1 slice mozzarella. Return to oven and broil 2 minutes, or until cheese is melted.
Step 8
Spoon tomatoes and balsamic glaze evenly overtop each chicken breast, then garnish with basil leaves. Serve, r
