Step 1
Dice your onion, chili, red pepper, garlic, and zucchini. Heat a pan on medium heat and fry them olive oil until soft.
Step 2
Add the ground chicken, use a spoon to break it up, and stir until it is browned.
Step 3
Rough blitz the tinned cherry tomatoes in a blender, or use a hand blender. Add to the pan with tomato purée, mixed herbs, salt, pepper, and chili flakes. Stir until combined.
Step 4
Let the sauce simmer on low heat while you boil some water for your gnocchi. Cook gnocchi to package instructions, they should only be a few minutes. Drain before adding to the chicken and vegetable sauce.
Step 5
Preheat oven to 180 celsius. Put the gnocchi and sauce mix into an oven dish, slice the mozzarella, and later on top. Sprinkle on grated parmesan. Bake for 10 minutes, the. switch to the broiler for a couple minutes until the cheese is bubbling and slightly golden.
Step 6
Serve with pan fried or steamed green vegetables!
